The yield in processed product does not reach values higher than 80%. From the production point of view, the main technological operations involved in the preparation of industrial (peeled) products are as follows:

  • Whole peeled tomatoes:washing and sorting - peeling - separation of skins - product sorting - canning - addition of preserving liquid under atmospheric pressure or vacuum - seaming - sterilization - box cooling - storage. Prepared in accordance with good manufacturing standards.
  • Filleted peeled tomatoes: washing and sorting - peeling - separation of skins - product sorting filleting - draining - canning - addition of preserving liquid under atmospheric pressure or vacuum - seaming - sterilization - box cooling - storage. Prepared in accordance with good manufacturing standards.

In addition, the processed product must meet the following minimum requirements:

  • whole peeled tomatoes
  • peeled tomatoes in fillets

Pomodoro San Marzano dell'Agro Sarnese-Nocerino PDO can be packaged in glass containers and tinplate boxes of standard D. R. F. (double cold reduction) choice.
These characteristics are without prejudice to future modifications of the containers, responding to new or specific technological and mercantile needs but still suitable for the product in question, within the limits allowed by the relevant Community regulations in force.
